Oh No, Oh No!!!

Hey Guys! I feel like I failed my fellow followers and bloggers! I’m so sorry! Something very interesting happened to me and I am going to share with you what is going on. I was having severe abdominal pain/bloating. This lead me to go see a doctor and I got tested for Celiac Disease. :( I tested positive for Celiac Disease and I had an endoscopy & biopsy done to confirm the diagnosis last Monday, August 6th. Most of my recipes consist of gluten, wheat, and barley! Now, I can not have any forms of gluten and my blog will have to be a gluten-free blog! Turns out, I feel so much better and I am so relieved that there was nothing worse going on with me! I am so thankful to be feeling healthy again! Celiac Disease is an easily treatable condition and I am very lucky to be able to eat a gluten-free diet in order to cure this disease. How am I supposed to go out on a date!? I have no idea. I will have to work on that ;)

*A little bit of information on Celiac Disease: 

According to Yahoo Health, Celiac disease is an inherited, autoimmune disease in which the lining of the small intestine is damaged from eating gluten and other proteins found in wheat, barley, rye, and possibly oats.

What are your thoughts/ideas on this topic? Should I start up a new blog on eating gluten-free? Do you think I should continue with Antioxidantgirl as a healthy way to eat gluten free? Eating gluten free is not for everyone; however, it is a great way to stick to fruits, vegetables, dairy, and protein! I have been experiencing with gluten-free recipes & they taste phenomenal!

The Real Deal

Hey Everyone. I apologize for not being able to post during finals week. This week has been hectic, filled with studying, & I wish I could blog instead! ;) Also, I found out I will be interning for a company called Nourish RDS. This company consists of two Registered Dietitians who LOVE what they do. They are nutrition nerds like me. They just signed a contract for Cliff Bar & Luna Bar!  I am so excited to have this opportunity to help them out at upcoming events!!! This is the real deal for me & I will get to see what it is like to run a business as a Registered Dietitian. I can’t wait!!!

Today’s Breakfast: French Toast Oatmeal with Blueberries

I encourage you to make this oatmeal!

Old Fashioned Oats

1 tablespoon of Vanilla

1 teaspoon of Nutmeg

1 Tablespoon of Cinnamon

1 Tablespoon of Maple Syrup

1 Teaspoon of Brown Sugar

1 Teaspoon of Pumpkin Spice

*This oatmeal consists mainly of spices & very little sugar! Enjoy! Let me know what you think! 

For lunch, I decided to experiment with tuna in the kitchen. I never tried tuna with Greek yogurt before. I decided to mix in low-fat Greek yogurt, relish, curry, salt & pepper, and some celery for a crunchy texture. It turned out to be DELICIOUS!

2 cans of tuna (your choice)

2 sticks of celery

2 tablespoons of Relish

1/2 teaspoon of curry

1/4 cup low-fat Greek yogurt

Salt & Pepper

This lunch is CHEAP, easy, & tastes great! Enjoy with a bell-pepper, apple, or anything that is healthy & yummy. :)

Bumpin Stuffed Bell Pepper Tuna Salad

Hey Everyone! As you can see, my lunch consisted of a bell pepper stuffed with tuna. (YUM) I LOVE tuna, but hate mayonnaise. Here is the recipe: 

1 can of Tuna (your choice)

1 Tablespoon of Aioli Garlic Mustard Sauce (Trader Joe’s)

2 Tablespoons of Relish (or more)

*Stuff the tuna inside of an empty bell pepper & toss it on plate of greens! 

Complicated hu? ;)  

I also enjoyed my lunch with an apple.

Healthy Fun?

 

Hey Everyone! Is it possible to maintain a healthy lifestyle on the weekends? How do we say no to “one too many drinks” or “eating unhealthy” with friends? Sometimes it can be very difficult to maintain a social life, if we are constantly “the only one not having dessert”.  Is there a solution to this problem? I created a list of tips that help me stay healthy in college, while maintaining a healthy social life. :)

Healthy Fun Tips:

1.) Everything in moderation! I used to be “too strict” on myself. I have learned to live in moderation day by day. This made me happier & healthier.

2.) Suggest a night of dancing! Dancing burns over 300 calories per hour. Dance the night away & splurge on a drink every now & then. (Without the guilt)

3.) Don’t be afraid to say “No”. Real friends understand that living a healthy lifestyle is important to you. If they cannot understand, then they are not a true friend.

4.) Don’t be afraid to say “Yes”. Sometimes it is healthier to have an occasional dessert. Do not feel guilty “giving in” every once in a while. Only “YOU” know your body & what you feel is best for yourself.

5.) Exercise Frequently. No matter how busy you are, exercise frequently. Exercise relieves stress, boosts the metabolism, & makes you feel good!

This weekend, I went hiking with a bunch of “nutrition nerds” like me. ;)

I am involved in a club at my community college called “SNAC”. SNAC stands for Student Nutrition & Wellness Advocates at College of the Canyons. I encourage all of you to get involved in a sport, hobby, or club that makes you happy!

Beat that Boredom

Hey Everyone! Do any of you have those days when the gym seems like it’s going to be “painfully boring”? I want to share my “Beat that Boredom” workout with you. I know I sometimes fail to head to the gym because staying on one cardio machine can be  very repetitive.

Here is the workout: 

10 Minute Warm up: Elliptical on 5.0

10 Minute Interval: Run/Walk on treadmill Switch every two minutes from running to walking

10 Minute Stair-master: Do the stair-master on a level of 6.0 or above

10 Minute Cool-down: Walk on Treadmill for 10 Minutes

***ALWAYS STRETCH for at least 10 minutes

=50 Minute Workout :)

For an inspirational quote, I found this. “Volunteers are not paid — not because they are worthless, but because they are priceless.” I was involved in an organization called Girls on the Run.  Girls on the Run was VERY rewarding in so many ways. I coached 5th grade girls & had the opportunity to talk to them about a variety of different topics such as nutrition, positive body image, & the importance of taking care of our bodies. This program is specifically designed for low-income areas. Girls on the Run is a unique program and I highly recommend it. Here is a brief picture of the team: (the end of the season party :) )

Guzzle, guzzle, & guzzle some more

Hey Everyone. I want to apologize for not posting for the past couple of days. There has been a family member suffering from cancer & he has passed away. I know he is in a better place. I am very honest with all of you & I know that LIFE has UPS & DOWNS. He inspired me in so many ways & I know he wants me to do what I am PASSIONATE about. Blogging & hearing what you guys have to say makes me HAPPY in so many ways.

Keeping our bodies hydrated is so important! I can’t even express the importance that water gives to our bodies. I carry around a HUGE water all day in order to hydrate enough throughout the day. However, this past week I was so busy. I felt light-headed, sick, & unhealthy simply because I forgot to DRINK enough water.

Today, I also hung out with my best friend. Healthy relationships with the people you love is so vital to our health. Living a healthy life-style is not strictly  about focusing on nutrition & fitness. Living a healthy life consists of healthy relationships & love.

Today’s Question: How do you stay hydrated throughout the day? Do you any tricks or tips?  

Pesto Turkey Sandwich on 100% Whole Wheat Ciabatta Bread

Hey Everyone! This morning I ran about 6 miles. Here is my post workout snack. I had tons of energy and I really felt like this was the perfect snack to have right before a long run. Don’t worry! (I had 2 scrambled eggs with blueberries and coffee for breakfast) I had an apple with almonds around 10:00 a.m.

Next was lunch & an afternoon movie with Jeremy!

We stopped by my parent’s house for a quick afternoon visit! :)

Later on in the afternoon, we saw the Five-Year Engagement & we were both laughing/crying from laughing during the whole movie! I definitely recommend it!

We had lunch at Whole Foods Market. (one of our favorite places to eat a healthy lunch) I decided to get a Turkey Sandwich on 100% Whole Wheat Ciabatta Bread: including Pesto Spread, Balsamic Onions, Arugula, Avocado & Romaine lettuce.

Here is a picture of my sandwich. (I definitely recommend it) This sandwich can easily be made at home if you have all the ingredients.

Late-afternoon I was feeling a sweet craving coming on…

which lead to a mini Golden Spoon Frozen Yogurt!!! If you are from California, this frozen yogurt place is DELICIOUS. It is recommended by Registered Dietitians & has many beneficial probiotics. (probiotics help digestion & get rid of all bad bacteria) I had a mini size, which is about 100 calories! (pretty good for a frozen yogurt ;) ) If you are not from California, you need to stop by Golden Spoon Frozen yogurt if you ever come & visit!
